Best cherry pie recipe for a fruit-filled, sliceable finish
The best cherry pie recipe depends on your fruit: sweet cherries and sour cherries do not need identical sugar. This home-kitchen version uses sweet cherries and cooks the filling first so its moisture can be assessed.
Make it in a 9-inch pie plate. The filling needs to cool before assembly, and the baked pie needs several hours before slicing. Those waiting stages are part of the method, not active preparation.
Use a prepared double-crust dough whose ingredient quantities and handling instructions you know. Do not substitute one single-crust portion and expect enough coverage.
Frozen sweet cherries may release more liquid; assess the cooked filling and allow excess juice to reduce before assembly. This is a variation for home ovens, not a claim of universal superiority or a physical taste test.

Ingredients
Step 1
Combine cherries, sugar and lemon juice in a saucepan. Heat gently until juice appears. Mix cornstarch with the measured water and stir into the fruit. Simmer while stirring until the juice thickens and bubbles throughout. Cool completely.
Step 2
Heat oven to 425°F/220°C. Roll half the chilled dough to line the pie plate without stretching. Spoon in the cool filling.
Step 3
Roll the remaining dough, cover the fruit and seal the edges. Cut vents so steam can escape. Beat egg with 1 tsp water and brush lightly over the top.
Step 4
Set on a rimmed baking sheet. Bake 20 minutes, reduce to 375°F/190°C and bake about 30–40 minutes more, until pastry is well baked and filling bubbles at the vents. Shield the rim if it browns too quickly.
Step 5
Cool on a rack for at least 3 hours before slicing. A hot filling is more fluid and may not hold a neat wedge.
