Best chicken noodle soup recipe for a clear, practical method

4 servingsSoup

The best chicken noodle soup recipe is one you can repeat with a clear broth, properly cooked chicken and noodles that have not turned mushy. This version gives each component its own timing rather than boiling everything together from the start.

Use fully thawed boneless chicken thighs for a manageable weeknight pot. A whole bird or frozen chicken would need a different cooking plan. The result is four main-course bowls.

For planned leftovers, cook noodles separately and add them to individual bowls. Store broth and cooked chicken promptly chilled, with noodles in a separate covered container; combine and reheat portions thoroughly.

A cloudy broth is not necessarily a safety problem, and a clear broth does not prove safe handling. Use temperature and storage practices for that assessment. If the broth is very salty, dilute cautiously and retaste rather than adding extra uncooked noodles merely to absorb salt.

Ingredients

Step 1

Wash and chop vegetables. Warm oil in a large pot and soften onion, carrot and celery for 6–8 minutes without deep browning.

Step 2

Add broth, thyme and chicken. Bring to a gentle simmer and cook until the thickest chicken pieces reach 165°F/74°C, often about 20–30 minutes depending on their size.

Step 3

Transfer chicken to a clean board and shred or cut it. Add noodles to the broth and cook according to their package, checking before they become overly soft.

Step 4

Return chicken and heat through. Add parsley, taste and adjust salt and pepper. Serve promptly so the noodles do not keep absorbing broth in the pot.
