Homemade Alfredo sauce with Parmesan and cream

This homemade Alfredo sauce is an American-style cream sauce for hot pasta. The homemade Alfredo sauce recipe makes four sauce portions; pasta is prepared separately and is not included in the nutrition.

Use 240 g heavy whipping cream with about 36% milkfat, 50 g unsalted butter and 80 g hard Parmesan freshly grated from a block. The base includes 0.2 g ground nutmeg. Use 60 g freshly heated drinking water rather than starchy reserved pasta water, so the liquid addition is defined.

The sauce is best served immediately. Divide it into four equal shares after the final thinning; the exact finished weight varies with evaporation. Do not add an unmeasured handful of cheese or extra butter to this base.

Allow approximately 15 minutes in total, including about 15 minutes of active preparation. This is a planning estimate; cooking and cooling depend on the equipment and ingredients.

Nutrition is an ingredient-based estimate per portion: one quarter of the complete sauce, without pasta. The calculation uses the specified edible weights and USDA reference foods. Optional serving extras are excluded; actual brands and final cooked weight can vary.

Ingredients

4 servings

Step 1

Finely grate the 80 g hard Parmesan. Weigh the 240 g cream, 50 g unsalted butter, 0.5 g black pepper, 0.2 g nutmeg and 60 g drinking water. Heat the water separately.

Step 2

Warm the cream and butter over medium-low heat in a small heavy saucepan, stirring until melted. Allow gentle steaming but avoid a rolling boil.

Step 3

Remove from direct heat. Add Parmesan in small handfuls, stirring until incorporated; then add the weighed pepper and nutmeg.

Step 4

Stir in the 60 g hot drinking water gradually. The sauce should coat a spoon but still flow. Divide into four shares and use immediately. Pasta and any additional seasoning are separate serving choices, outside this base.
