Pan-seared salmon with lemon: a two-portion method
Pan-seared salmon needs a dry surface and enough room in the skillet. This two-portion method uses fresh or fully thawed raw salmon, not smoked salmon. Start with fillets of similar thickness and finish with lemon after the sear.
If the surface is browning too fast while the middle remains below the safe temperature, lower the heat rather than repeatedly flipping. The minute range is a starting check, not a universal promise. Skin can protect the flesh during the final stage; eating it is optional.
Ingredients
Step 1
Check salmon for pin bones and pat dry. Season lightly. Choose a heavy skillet large enough to hold both fillets with a gap between them.
Step 2
Heat oil over medium-high heat. Lay salmon flesh-side down and let it sear without repeatedly sliding it around. After about 3–4 minutes, turn with a wide spatula.
Step 3
Lower heat to medium and continue cooking on the skin side, checking the thickest part. Fish should reach 145 °F (63 °C). A thicker fillet may need a brief covered finish at lower heat.
Step 4
Transfer to clean plates and add lemon juice. Serve promptly; do not leave the finished fish in a hot pan while waiting for an uncooked side dish.
